The team strives to reduce its carbon footprint by having produce delivered on bicycles, fighting food waste and single-use plastic, recycling, working with sustainable products, and aiming to be more plant based.

Curating the best of seasonal and sustainable products of the North-sea and Dutch soil, with a focus on vegetables and seafood. The team aims to deliver the best quality of food and service to their guests with the intention to bring awareness about sustainability.

Head Chef Renaud Goigoux and his team experiment with new flavors, vegetables, herbs, and spices from faraway countries and the latest cooking techniques to combine these with the more classic kitchen to prepare the most beautiful and tastiest dishes. Meet the Chef

Renaud Goigoux grew up in Clermont-Ferrand, France. From a young age, he started cooking and developed a deep passion for the world of hotels and restaurants. After gaining international experience in countries including Australia, the Philippines and Switzerland, he settled in Amsterdam in 2014.

He worked in the kitchens of restaurant Daalder and then became sous-chef under Guillaume de Beer and Freek van Noordwijk at restaurant Breda. In 2017, Joris Bijdendijk gave him the opportunity to become sous-chef at the Michelin-starred Rijks*, where he discovered the Dutch terroir and the refined gastronomy that are now an inseparable part of his identity. In June 2023, the Van der Meer family entrusted him with Senses, where he is now developing his own unique signature style.

At Senses, our kitchen is a place of constant evolution and creativity. The team draws inspiration from the changing seasons, vibrant colors and in-depth exploration of ingredients. Technique is at the heart of every dish, with a focus on classic French sauces, complemented by subtle Japanese influences and the guiding 80/20 philosophy:
80% plant-based, 20% animal-based.

Our team is proud to present a tasting menu featuring fresh fish and seafood from the North Sea, as well as a fully plant-based tasting menu that celebrates the richness of vegetables. For those who prefer more options, we also offer an à la carte menu.

With precision, passion and innovation, our kitchen team crafts unforgettable culinary experiences for every guest.

ALLERGIES

At Senses, we work from a plant-based basis, our dishes are 80% vegan, elegantly complemented with fish, shellfish and crustaceans. This approach allows us to easily accommodate various dietary preferences and allergies, such as lactose-free, gluten-free, vegetarian, or fully vegan.

Our kitchen is flexible and creative, ensuring everyone can enjoy a tailor-made culinary experience.
Please note: due to the use of soy products in our preparations, we unfortunately cannot accommodate a soy allergy.
