Autumn menu with game, mushrooms and pebbles of duck liver

After a nice fresh summer menu, we present you the autumn menu from our master chef Lars Bertelsen. New flavors, colors and aromas but according the same Senses concept: creative and unconventional. We have chosen a more robust version with earthy flavors. Lars obviously took into account readily available seasonal vegetables. In addition you can find some beautiful mushrooms, truffle and farm chicken.
As Lars wants to keep improving the presentation and preparation of his dishes, he creates and continuously adjusts new techniques. Guests will be surprised over and over. Lars would not have been Lars if he had not come up with a special culinary invention for this season. "I have transformed duckliver into edible pebbles”.
